Judith Lee Katsoff, of East Windsor NJ, died suddenly after a brief illness on July 6, 2022 at the age of 57. Judy was born in New Brunswick, N.J. on December 29, 1964 and raised in Matawan, NJ. She graduated from Matawan Regional High School in 1982, continued her education at the University of Delaware and graduated with a bachelor's degree in Marketing. She began her career in sales working for Valvoline Oil, and various medical and chemical supply companies. After several years, Judy returned to school, obtained a degree in Occupational Therapy and worked as an Occupational Therapist primarily at multiple rehab centers within the Tender Touch Rehab network. She loved working with her patients and wonderful co-workers. Judy married Ken Katsoff on June 19, 2003 and gave birth to Tyler on May 24, 2004. Ken and Judy were so proud when Tyler recently graduated from Hightstown High School in June with plans to attend Rutgers in the fall. Judy was a member of the Matawan First Presbyterian Church and First Presbyterian Church of Cranbury. Judy enjoyed the beaches of Manasquan and the Outer Banks, and spending time with her entire family. She loved reading. Judy will be dearly missed by her husband Ken and son Tyler; mother Margaretha Ann Shafto; brother and sister-in-law John and Bonnie Shafto and their sons Kyle and Rad.
